(doc): introduce sight::data::ptr

Description

The documentation has been updated accordingly. The Object/service section has been slightly reorganized to avoid redundancy and skip some low-level concepts such as factories.

Closes #49 (closed)

How to test it?

Read "Object/service" section, "How to add a service" and "AppConfig", and ensure everything is clear and consistent.
