enh(ci): adapt includes sort with new config.hpp syntax

Description

Sight now requires fully qualified include paths for the file "config.hpp". This adapts our include sort in sheldon to this new rule.

How to test it?

You can check sheldon but as itself the pipeline of sight!1093 (merged) shows that it works.
