(build): improve cmake howto to match modern sight usage

Description

Documentation and usage of CMake might be a bit outdated even after recent updates.

Proposal

• moduleParam is documented instead of module_param.
• Tutorials XML configuration are outdated, update them
• Update activity requirements change from sight!694 (merged)
• Update installation instructions (may be outdated)
